Method
The cod is soaked a couple of days beforehand, taking care to change the water every 12 hours. It is washed, the fins are removed and it is cut into rather small pieces, which are then dipped in flour.
The olive oil is abundantly heated in a pan; the pieces of cod are added a little at a time, browned well on both sides, removed and placed on a sheet of straw paper.
